Ingredients

  • 1 block firm tofu, drained and crumbled
  • 1 purple cabbage
  • 1 can mushroom, rinsed and drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large tortillas
  • Fresh cilantro, for garnish
  • Avocado or salsa, for serving (optional)

For the Creamy Cashew Sauce

  • 1/4 cup cashew butter
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Hot sauce to taste (optional)

Instructions

  1. Sauté the Aromatics: In a large skillet, heat a drizzle of oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Cook the Tofu: Add the crumbled tofu to the skillet along with the cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes until heated through and slightly crispy.
  3. Add the Veggies: Stir in the mushroom and bell peppers, cooking for another 5 minutes until the peppers are slightly softened.
  4. Prepare the Cashew Sauce: In a small bowl, whisk together the cashew butter, water, lemon juice, maple syrup, smoked paprika, garlic powder, salt, pepper, and hot sauce if using. Adjust the consistency with additional water if needed to achieve a pourable sauce.
  5. Assemble the Burritos: Lay a tortilla flat and layer with a portion of the roasted potatoes, sautéed vegetable and bean mixture, and sliced avocado. Drizzle generously with the creamy cashew sauce. Fold in the sides of the tortilla and roll tightly to enclose the filling..
