This mushroom and spinach lasagna is a comforting and satisfying dish that combines tender lasagna noodles, a savory mushroom and spinach filling, and layers of creamy ricotta and gooey mozzarella cheese. Each bite is bursting with rich flavors, making it a beloved classic in any household.

Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced (white or cremini)
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a skillet, sauté the sliced mushrooms over medium heat until golden brown, about 5-7 minutes. Add the chopped spinach and cook until wilted. Season with garlic powder, onion powder, salt, and pepper. Remove from heat.
  4. In a bowl, mix ricotta cheese, egg, and Italian seasoning until well combined.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the mushroom-spinach mixture, 1 cup of mozzarella cheese, and a layer of marinara sauce. Repeat the layers, ending with the last 3 noodles, marinara sauce, and remaining mozzarella and Parmesan cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
