Delicious Loaded Potato Meal

These loaded twice-baked potatoes are creamy, cheesy, and filled with nutritious broccoli, making them a delightful side or main dish. The addition of juicy steak and shrimp elevates this meal to a whole new level of indulgence, providing a satisfying and hearty experience.

Ingredients

  • 4 large russet potatoes
  • 2 cups fresh broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 pound steak, grilled to desired doneness and sliced
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Bake the Potatoes: Pierce the potatoes with a fork and bake them directly on the oven rack for about 45-60 minutes, or until tender.
  3. Prepare the Filling: Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the insides into a bowl. Mix the potato flesh with steamed broccoli, cheddar cheese, sour cream, butter, salt, and pepper until smooth.
  4. Stuff the Potatoes: Spoon the filling back into the potato skins, packing it in tightly. Top with extra cheese if desired.
  5. Bake Again: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through and the cheese is bubbly.
  6. Cook the Steak and Shrimp: While the potatoes are baking, heat olive oil in a skillet over medium heat. Season the shrimp with garlic powder, salt, and pepper, and cook until pink and opaque, about 3-4 minutes per side. Remove and set aside. In the same skillet, quickly sear the steak slices until heated through.
  7. Serve: Plate the loaded potatoes and top with sliced steak and shrimp. Garnish with fresh parsley and enjoy!
