  2. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened.
  3. Add ground beef to the skillet, breaking it apart. Stir in chili powder, cumin, salt, and pepper. Cook until browned, then remove from heat.
  4. Pour half of the enchilada sauce into the bottom of a baking dish.
  5. Warm the corn tortillas to make them pliable. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them up and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden. Garnish with chopped cilantro before serving.
