This coffee and walnut cake is a beautifully layered dessert, featuring a light yet rich sponge infused with coffee and scattered with crunchy walnuts. The cake is smothered in a silky chocolate ganache, providing a decadent finish that elevates the flavors and textures.

Perfect for gatherings, this cake is sure to impress your guests with its delightful coffee aroma and the delightful crunch of walnuts intertwined throughout the slice.

Ingredients

  • 200g unsalted butter, softened
  • 200g granulated sugar
  • 4 large eggs
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 100g walnuts, chopped
  • 50ml strong brewed coffee, cooled
  • 150g dark chocolate, chopped
  • 100ml heavy cream
  • 1 teaspoon vanilla extract
  • Additional walnuts for decoration

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Gradually add the eggs, one at a time, ensuring each is fully incorporated.
  3. Sift together the flour and baking powder, then gently fold into the butter mixture. Stir in the brewed coffee and chopped walnuts until evenly mixed.
  4. Divide the batter between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Once baked, allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. Meanwhile, make the ganache by heating the heavy cream in a saucepan until just simmering. Pour over the chopped dark chocolate and let sit for a couple of minutes, then stir until smooth.
  7. Once the cakes are cool, place one layer on a serving plate, spread a layer of ganache on top, and place the second layer on top. Pour the remaining ganache over the top and let it drip down the sides.
  8. Decorate with additional walnuts on top and allow the ganache to set before slicing.
